“We left London in a panic and thought we’d never make our flight, Ryan Air direct to Carcassonne, but here we are! We were promptly picked up by our driver and 20 minutes later were at Chateau Canet were we were greeted with friendly smiles and shown to our charming cottage, “Syrah”. It is hard to believe that in the space of 4 hours you can be transported from the hustle and bustle of London and find yourself in such a haven of calm”.

“I woke up to a real treat, breakfast in bed served by my dear husband! He admitted that our hosts had made it very easy for him as the fridge in the cottage had everything he needed and the warm baguette and croissants were delivered to our door, not to mention the freshly squeezed orange juice!”

“The market in Carcassonne was great fun, Victoria really knows her way around and I was surprised to see how many small organic farmers there were. We bought the most fabulous selection of wild mushrooms for our cooking class tomorrow and I even had time to check out a couple of the antique shops in town……Matthew stayed at the domaine as he wanted to join Lionel, the winemaker and Floris in the winery.... nothing like true hands on experience”.

“What a luxury to be able to sleep in… and what an amazing evening. Wandering through the small cobble stoned streets of Cite de Carcassonne was quite magical and dinner was sensational. Apparently the chef is on his way to earning his second Michelin star, I can understand why”.

“What an inspiring day, lunch in the olive grove was truly memorable, such a special setting. I can’t believe we made all those delicious dishes in just one morning, then again there is nothing like working along side a real professional. I will definitely be using the fresh ‘cepes’ recipe for my next dinner party!”.

“Matthew can’t stop talking about his new “favourite” wine: the one he blended in the cellar this morning, a mix of Syrah and Grenache grapes. I think he will dream about becoming a winemaker tonight!”

A weekend getaway at Chateau Canet combines a fun wine experience with the joy of cooking and the opportunity to discover Carcassonne and the “Pays Cathare”.

We your hosts appreciate how important it is to ‘getaway’ from it all and indulge in some time together.  We have planned your weekend to ensure you have the right balance of time to relax in a truly enchanting setting as well as taking part in our wine tasting courses, cooking classes and visits to the medieval city of Carcassonne. 

The Program

Getaway

Friday

  • We pick you up at the Carcassonne airport or train station.
  • Enjoy an introductory wine tasting and aperitif at the domaine,
  • followed by a traditional regional dinner served with wines from Chateau Canet.

Saturday

  • A morning visit to Carcassonne (open air and covered market, antique shops)
  • A gourmet picnic lunch in the vineyards of the domaine with fresh goods bought at the market.
  • An guided walk through the vineyards and the opportunity to “taste” and discover the meaning of a much used and key word in the French wine lexicon: terroir.
  • Time to relax by the pool, play a game of tennis or read a book under a tree in the olive grove.
  • An early evening tour of the medieval Cite de Carcassonne with a private guide.
  • A gourmet dinner at a Michelin star restaurant.

Sunday

  • A wine “experience”: learn about the wines of the Languedoc Roussillon, master the art of blending wine and taste the influence of the barrel aging in the cellars of the domaine, or 
  • A cooking class with a local chef using local products and creating regional dishes which will vary according to the season.
  • Lunch at the domaine, a feast created at the mornings cooking class accompanied by the wines you blended in the cellars that morning.
  • You will be dropped off in Carcassonne at your leisure on Sunday afternoon.

This Includes:

  • 2 night’s accommodation in one of our cottages.
  • All meals including a gastronomic dinner at a Michelin Star restaurant.
  • Pick Up and Drop Off in Carcassonne.
  • Saturday morning trip into Carcassonne.
  • A private tour of La Cite de Carcassonne.
  • An animated wine tasting & wine blending course, or
  • A cooking course and a few great recipes to take home.
  • Time to relax and enjoy the tranquil pace of life at Chateau Canet

Getaway

Options:

  • An additional night on Thursday or Sunday for 80 euros per person including breakfast.
  • Transfers to/from Toulouse, Montpellier or Gerona can be arranged.
  • Rent one of our custom-designed Rocky Mountain bikes for the weekend for 30 euros.  Your bike will be tuned and ready for your arrival and we have many route descriptions already mapped out.
