Our Vineyard
Our 115-hectare family estate, in the Minervois region of the Languedoc, is nestled against the” Balcons de l’Aude”, a stone’s throw from the medieval town of Carcassonne.
This terroir, rich in limestone and clay, benefits from a Mediterranean climate, which is ideal for winegrowing. It also benefits from the particularity of the influence of two very different winds, the “Cers”, a cool wind coming from the Atlantic and the “Marin”, a warm wind coming from the Mediterranean. This double climate makes it possible for us to produce fresh and elegant white wines and rich and fruity red wines.
Our motto is a good wine starts with good grape. As such we believe in taking great care to tend to the vineyards and the surrounding eco system, as described under sustainability.

THE OLIVE GROVE
The 3 hectares olive grove is home to 6 different varieties of olive trees including the typical Languedoc-Roussillon olive, the Lucques olive.

Taste it
Despite a significant increase in production, the olive grove, planted in 1995, has not yet reached its optimum maturity and production. Like the vineyard, our olive grove is cultivated according to the “Terra Vitis” specifications, which limit the use of chemical products.
We have 2 olive harvest, one mid-September when they are still green, the other at the end of November, when they are fully ripe and purple and black in colour. The green olives are destined for eating while the ripe olives are used for making olive oil.
In order for our olive oil to be classified “extra virgin», the olives are pressed within 24 hours. The oil is then centrifuged and left to rest for 2 to 3 months before being bottled – unfiltered – in February. Cold-pressed olive oil is a guarantee of superior quality with low acidity and no bitterness.
